The wines from the Jura first came to my attention at one of my favorite restaurants in the world, L’Utopie in Québec City when my band Nous Non Plus was on tour there a few years back. Thirty-something owner and sommelier Frédéric Gauthier has an amazing palate and his list has always delivered something unusual and exciting to my table.
So when I read Eric’s preview of his column on the “Unusually Good” wines from the Jura at the end of a long workday for both me and Tracie B, I decided to cork a bottle of Puffeney 2006 Arbois Trousseau that we had picked up here in town at The Austin Wine Merchant.
At a talk on modern vs. traditional wines he gave in New York a number of years ago, Angelo Gaja discussed what he called “original” wines: wines that “surprise” you, he said.
The Trousseau, like nearly everything I’ve tasted from the Jura, was one of those “original” wines: it’s one of those wines that could only be made in that place, by those people, using the grapes, the techniques, and the terroir that belong uniquely to them. It was light in body but with some confident tannin, with berry fruit and brilliant acidity. Tracie B and I couldn’t stop talking about it: one of those wines that surprises you and speaks of a little mountainous utopia in France along the Swiss border where they make truly wonderful wines.

Ever the Solomon of wine bloggers, Eric posted Friday on the sometimes “strident” tones tossed about in the debate over natural wine and its definition.
I greatly appreciated Eric’s observation:
I think that too much effort is spent coming up with a precise definition. Making wines “naturally,’’ after all, does not mean the wines are any good. All things considered, I prefer wine that would fit a rough definition of natural. But I don’t think the dividing line between natural and — what, unnatural? — is always that clear. Certainly, it is not if you are trying to characterize a winemaker.

It does seem that the one thing that all natural wine lovers — from enthusiast to dogmatist — agree on is that “ambient” or “native” yeasts (i.e., naturally occurring yeasts) are a key if not the key element necessary to be allowed into the natural wine pantheon.
The delicate issue of yeast was illustrated Eric’s account of winemaker Roumier who “tries to make wine as naturally as he can, but he told a story once of having a batch of wine that had gotten stuck in mid-fermentation. The only way he could get it going again was to add yeast, a cardinal sin among many natural wine devotees.”
It made me think of what Produttori del Barbaresco winemaker Aldo Vacca recently told me when I called him to transact some other business but couldn’t resist asking him about the practice of “yeasting” at the winery.
“In a great vintage, we do not add yeast,” he said, “because the fermentation does not need any help. But in many vintages, we use a yeast called ‘Barolo strain’ that was developed based on yeasts that occur naturally in our terroir.”
According to the results of a quick Google search, the Barolo strain was “selected from 4 year study by University of Torino from over 600 isolates taken from 31 wineries of the Barolo region. The selection goal was to find a dominant natural yeast from Nebbiolo that is able to retain and enhance color.”
I never have and never would call Produttori del Barbaresco a “natural wine,” even though I believe the style of the wine jives with the wines of producers who subscribe to the natural wine movement. And I wonder if any of those winemakers have ever used a cultured yeast in a challenging vintage (like Roumier).
Throughout the debate, many have asked rhetorically, would the coinage of an expression other than natural wine offer an umbrella for those wines that aspire to the ideals of natural winemaking but don’t quite achieve its sanctity?
Founder Teobaldo Cappellano dubbed the Italian natural wine movement Vini Veri or Real Wines and added the epigram, wines as natural intended them.
Perhaps we should call these wines “humanist” wines. After all, all wine is made by humankind for consumption by humankind. In the end, I find that the wines I like the best are the ones that take into account not nature but rather “human scale,” as Guilhaume Gerard put it (in his remarks at the Symposium).
We can discuss natural wines and their definition until we’re blue in the face, but in the end, we are human — all too human.

Seems that everyone who is someone is talking about “orange wine” these days. Last week Eric and Alice attended an “orange wine” dinner in Tudor City (Manhattan) and posted these excellent dispatches respectively, here and here.
Just like the ongoing discussion of what can truly be called “natural wine,” I’m sure some will disagree as to what “orange wine” is exactly but the generally accepted defining element is skin-contact (maceration) during fermentation of otherwise white grapes. Not all the wines included in the “orange” genre undergo maceration but there is most definitely an orange revolution afoot.

I recently took Tracie B to try the pizza at Doug Horn’s Dough in San Antonio. I had eaten there a few times and was consistently and repeatedly impressed by the authenticity of the pies. It was time to call in the expert: after all, Tracie B lived in Ischia outside of Naples for nearly five years. She KNOWS her authentic Neapolitan pizza. She was duly impressed and suffice it say that we will soon be back.
Above: Self-Portrait in a Convex Spoon? I think I just gave myself an idea for this week’s Sunday Poetry. Doug’s panna cotta is as good as it gets. I told Doug that his panna cotta was one of the best I’d tasted outside of Italy and one of the best ever tasted, really. “I know,” he responded dryly. This guy doesn’t kid around.
The story has been told many times but was first recounted famously in English by Eric: somewhere in the 1960s and 70s, the eccentric Italian noble, Alberico Boncompagni Ludovisi, prince of Venosa, developed what are still undeciphered methods of vinification and aging that allowed him to create unique, powerful, nuanced long-lived expressions of Malvasia di Candia, Sémillon, and Sauvignon Blanc. The secret at the Fiorano estate (located in the region of Latium, just north of Rome)? Mold… mold on the covering the aging casks, mold covering the bottles aging in the cellar.
I’ve had the great fortune to taste the wines many times. The first occasion was when they arrived in the U.S. in 2005. They had been rebottled and relabeled expressly for sale in the U.S. market and they commanded and continue to command a price that reaches beyond my means. But, man, they were good and they still are.
Yesterday, my friend Susana Partida, owner of Salute Wine, who brokers the wines in Texas, generously brought a bottle of the 94 Malvasia to lunch in Dallas (she and I became friends because her sister Felice cuts my hair at the James Allan Salon in Austin!).
Above: We lunched yesterday at Adelmo’s in Dallas, the see-and-be-seen wine industry hangout, where the simpatico proprietor Adelmo allows trade to bring wine. Adelmo is originally from San Vincenzo in Maremma (along the Tuscan coast) and he grew up in Florence. It’s always great to taste with him and glean wine knowledge from his many years in the business. He sent over some pâté and crostini after he tasted the Fiorano with us — his recommended pairing.
Would the prince have called these natural wines? Probably not. But are they? I believe they most certainly are. When you drink these extraordinary (and extravagant) wine, you taste the hand of an Italian aristocrat who recognized the nobility of the grape and the place, who got out of Nature’s way and let her do her work.
This was a wine, as Tracie B put it last night over our dinner of quesadillas, that “speaks of a place, of tradition. It’s real and it’s a product of its environment and of the culture, not of technology and manipulation.”
Susana generously sent me home with a half a bottle (we each had a glass with our lunch) and Tracie B and I lingered over the wine through dinner and a movie: Il postino, also from the 1994 vintage. In my more militantly Marxist university days, I might have dismissed this poignant romance as cloyingly engagé. But now that I’m a “Brunello socialist,” I can openly say that I found the movie irresistibly charming and ingenuously touching. Maybe it was because I remembered what Brunetta said about Troisi’s performance, in his History of Italian Cinema (translated by yours truly). Troisi, he wrote, gave “the world his career’s most heartbreaking hymn to life and love.” Maybe it’s because Tracie B’s generosity of heart and her wonderful spirit are rubbing off on me… The answer probably lies somewhere between a glass of 94 Malvasia and a kiss…

Mazel tov, Ale! His Wine Advocate scores and reviews are in and Il Poggione’s current releases are enjoying high marks from Antonio Galloni. Any one who reads Do Bianchi knows how much I love Il Poggione’s traditional-style Brunello and it’s great to see the winery get the recognition it deserves. These reviews and notes are testament to Antonio’s love of terroir-driven Italian wine. Chapeau bas, Antonio. I’ve been a fan since the days of your Piedmont Report and I love what you’ve done with the Italian notes at WA.
Another Italian wine guy, whose palate I respect immensely, Tom Hyland, also posted recently on a vertical of Il Poggione here.

If you read Do Bianchi, then you’ve heard me say it before: of all the cities I’ve visited in Texas, San Antonio is by far the most gastronomically exciting, as in the case of Oloroso, where I hung out the other day and paired some cru Beaujolais — Côte de Brouilly by Château Thivin — with my friend, chef, and owner Josh Cross.

Although I’ve always been a lover of French wine and I’ve sold a lot of French wine on the floor of Jaynes Gastropub in San Diego, I’ve never had the opportunity to spend so much time professionally with French wine and I’m loving it (the company I work for represents the Kermit Lynch portfolio in Texas). I snagged a bottle of the Thivin (which I sell) the other day and popped it with Josh at the end of a work day. It’s amazing how tannic Gamay can be in its single-vineyard expressions and the wine had just the right lightness to go with Josh’s cod and enough structure to pair perfectly with his rabbit. (Eric did a series of posts and a column on cru Beaujolais last year, definitely worth checking out.)

The tenor of the debate seemed to have reached fever pitch by the time I weighed in with my post Pizza, pairing, and Pasolini.
A Solomon of pizza lovers, Eric, the sage among us observed rightly that we don’t have to do it the way they do it Rome.

I have deep respect for Alan Richman (who also happens to be one of the nicest food writers you’ll ever meet) but his omission of Dough in the top 25 pizzas in the U.S. is a glaring oversight.
But now one of our nation’s greatest food writers, Alan Richman, tells us that “Italians are wrong about pizza… Pizza isn’t as fundamental to Italy as it is to America. Over there, it plays a secondary role to pasta, risotto, and polenta. To be candid, I think they could do without it.” (Here’s the link to the GQ article on the top 25 pizzas in the U.S. but it is a major pain in the ass to navigate.)

Alan has impeccable and unquestionable taste and I agree with almost all of his top-25 selections (at least those I have tasted myself). Anyone who reads Do Bianchi knows that I — like most Italophile oenophiles — have an obsession with pizza and that Lucali in Brooklyn is one of my all-time favorites (a preference that Alan shares).
I know that Alan is just having fun when he says that Italians are “wrong about pizza.” And I agree that Americanized pizza is a wonderful and spontaneous mutation of the ingenious simplicity that the Italians have created — like so many things they’ve given the world.

But to say that “Pizza isn’t as fundamental to Italy as it is to America” is egregious hyperbolism. Pizza — like pasta, like the Italian national football team — is one of the few notions that truly binds the Italians together as a nation — nation in the etymological sense, i.e., a shared birth from the Latin natio. (I have a great deal to say on this but I’m literally running out the door to San Antonio as I write this.)
Alan, Eric, and Tyler, please come to San Antonio anytime: we have much to discuss and the pizza (and the Brunello) will be on me. I promise that the trip will be well worth it.
If you’re planning your vacation in Italy this summer, think about Abruzzo…
After breaking away from the phalanx of wine professionals with whom I was traveling on my last day at Vinitaly in April, I had the great fortune to taste with Abruzzo winemakers Sofia and Emidio Pepe. The next morning, the earthquake struck the region in the hours before dawn, taking the lives of nearly 300 people and leaving 28,000 homeless.
You may remember Eric’s post “Aftershocks” which appeared on The Pour in the days that followed the tragedy in L’Aquila. As Eric pointed out, even though the Abruzzo wine industry wasn’t affected directly by the earthquake, the long-term impact will be drastic because 10-50% of the wine produced there is sold and consumed locally.
Above: I have always loved Emidio Pepe’s Montepulicano d’Abruzzo, made in a totally natural style. “Emidio Pepe may be even more of purist than Valentini [another one of Italy’s iconic natural winemakers],” wrote Burton Anderson in his landmark book Vino. “He crushes his grapes by foot” and “possesses not a single piece of modern equipment in his rustic winery.” Drinking these stinky elegant wines is like listening to Thelonious Monk’s “Ugly Beauty.”
Abruzzo is a pristine region of immense natural beauty. Its hills are dotted with wonderful medieval villages where life was never contaminated by the industrial progress forged during fascism.
L’Aquila (where the epicenter hit) was so named (“the eagle”) by 13th-century emperor Frederick II of Swabia who was one of the greatest falconers of his time. Dante condemned Frederick to his Inferno for being an epicurean.
If you’re considering/planning a trip to Italy this summer, think about Abruzzo.
One of the owners of Terroir Natural Wine Merchant and Bar in San Francisco, Guilhaume Gerard, recently reminded me that that the wines come first, before the people who import them. Guilhaume pointed out rightly that while there are a lot of people in the wine trade whom we admire and care about and others whose scruples give us pause, the wines are what is really important. I agree with him.
To Guilhaume’s observation, I would add only that the wines and the people who make them come before the people who import and sell them.
Today, after Franco and I posted on VinoWire about the tragic and senseless passing of the young Miha Gravner (left, photo by Alfonso), I was blown away by how many people linked back to our post, on Facebook and on their blogs, writing about how they never met the young man but how, nonetheless, they felt a personal connection to him and his family through their wines. As Franco wrote in his post at Vino al Vino, Miha had begun working closely with his father Josko and would have continued his father’s legacy.
Josko Gravner was part of a small group of radical “extreme” winemakers, who, as Eric wrote today in an unrelated post, vinified and aged their wine in clay amphorae. I’ve tasted Gravner’s wines on many different occasions, from many different vintages, and no one can deny that these are benchmark, original wines, wines that push the envelope of contemporary winemaking by reaching back to the secrets of the ancients. Josko is also one of the fathers of the natural wine movement in Italy and was inspired by the teachings of Rudolf Steiner.
If you’ve never had one of Josko’s wine, now is the perfect time to grab a bottle and raise a glass to him. They are some of the most individualistic, interesting, and unforgettable wines in the world from a man who has dedicated his life to exploring the possibilities of what wine can be. i, of course, have never met the man and am only familiar with his wines, but i’d like to think that personality can come across in wine making and that you can know someone just a little through their wines, and i wish him the best through this tragedy.
I imagine that Cory, Guilhaume, and I will open a bottle of Gravner at Terroir on Thursday night before I head over to do our set with Nous Non Plus at Rickshaw Stop.
Stop by if you have the time and we’ll remember a young man who would have made the wines we would have drunk for a lifetime.
Half-jokingly, a wine publicist and good friend recently remarked to me: “I mean, come on, let’s face it. No offense, but how many people read your blog anyway?” As much personal satisfaction that my blog gives me, I recognize that I’m no Eric, Alder, Tyler, or Franco.
But that’s partly what makes me all the more angry (and I promise this is my last rant for the week) when one of the truly influential sources of food and wine journalism publishes disinformation, like Dorothy Gaiter and John Brecher’s supercilious take on 2004 Barolo, published last week in The Wall Street Journal, or their truly offensive and imbecilic “10 Ways to Save Money Ordering Wine,” published on Saturday. (I apologize in advance to my friend J, a WSJ editor and writer I admire greatly for this second harangue about his colleagues: the poorly delivered humor in my post about the 2004 Barolo piece was simply that — poorly delivered.) Especially in this day and “age of responsibility,” when many of our nation’s restaurateurs find themselves gripped in a day-to-day battle for survival, Dorothy and John’s tips for not being “hosed” by restaurateurs (they actually use the word hose! in the WSJ!) and the accusatory, paranoid tone or their article are no less than nefarious. It’s important to acknowledge that restaurant-going consumers are feeling the financial pinch these days as well: Dorothy and John’s readers would have been better served by “tips on how to find value on the list at your favorite restaurant.”
Here are some highlights from their piece…
1. Skip wine by the glass.
I studied Italian literature at university but it doesn’t take a Ph.D. to figure out that a glass of wine costs less than a bottle. Wine by the glass is one of the ways that we find new wines we like without having to pay for the bottle. Better advice would be: when ordering a wine by the glass, ask your server if you have the option to purchase the whole bottle at the bottle price if you like the wine.
3. Bypass the second-cheapest wine on the list.
A generalization like this is simply stupid, irrelevant, and inappropriate. Honest restaurateurs (and most of them are honest) price their wines in accordance with the prices they are charged by wholesalers. Better advice: figure out what you want to spend and ask your server or sommelier which wines in that price point meet your expectations in terms of style, aromas and flavors, and desired pairing.
6. Never order Santa Margherita Pinot Grigio.
Even Eric and Charles — two palates who really do know something about Italian wine — liked Santa Margherita Pinot Grigio when they tasted it blind in a New York Times tasting panel. Dorothy and John, come on: this is insulting. Better advice: order what you like and enjoy when you go to a restaurant. Whether you like Pinot Grigio by Santa Margherita, white Zinfandel by Beringer, or first-growth Bordeaux (wines many would consider over-priced but coveted and thoroughly enjoyable nonetheless), then go for it. You go to a restaurant to have fun… not to be scared of being ripped off!
9. BYOB.
Dorothy and John, I hate to break it to you but bring-your-own-bottle is appropriate in two cases: 1) when a restaurant doesn’t have a beer and/or wine license; 2) when you bring an illustrious and expensive bottle that doesn’t appear on the restaurant’s list. And remember: whenever you bring your own bottle to a restaurant, be sure to order a bottle of equivalent value. Thrift, Dorothy and John, is no excuse for rude behavior or bad tipping.
Here you come again, Dorothy and John, Just when I’m about to make it work without you.
