Posted today over at the Houston Press on a wonderful pairing of Tracie P’s off-the-charts good King Ranch Chicken, which she made a few nights before I left for Italy, and a bottle of Montbourgeau Savagnin.

samantha–very easy recipe that will feed a small army, with leftovers. i was in a hurry that day, so i bought a rotisserie chicken (same price as a pound of breasts) and instead of shredding cheese (i find that pre-shredded cheese doesn’t melt as well), i bought very thinly sliced colby jack cheese (our favorite for melting) from the deli counter. made much quicker work of it without sacrificing anything.
