Puttanesca is not for prostitutes…

Above: spaghetti alla puttanesca. There’s one thing we can all agree on: “sugo alla puttanesca” (literally “whoreish sauce”) is made with tomatoes, olives, capers, salt-cured anchovies, garlic, and chili flakes (give or take an ingredient or two). There’s no questioning that it tastes good.

In the wake of my post-new-year’s eve post “Taittinger alla puttanesca”, fellow bloger Marco wrote me, collegially questioning my belief that “sugo alla puttanesca” should not be attributed to prostitutes or their culinary preferences. I promised Marco that I would do some more research and another post. Here’s what I found:

1) the earliest text to reference pasta “alla puttanesca” cited by the Grande dizionario della lingua italiana (edited by Salvatore Battaglia) is Raffaele La Capria’s 1961 novel Ferito a morte (translated as The Mortal Wound, 1962).

2) according to a study commissioned by the Unione Industriali Pastai Italiani (Italian Pasta-Makers Union), pasta “alla puttanesca” first became popular in Italy during the 1960s.

3) a search in The New York Times electronic archive revealed that the first mention of “puttanesca” sauce in the paper was made on January 28, 1972 by restaurant reviewer Jean Hewitt in her review of Trattoria da Alfredo (then located at 90 Bank street): “spaghetti Puttanesca [sic], which has a tantalizing tomato, garlic, anchovy and black olive sauce.”

4) in her landmark tome on Neapoitan cuisine, La cucina napoletana (1977), Jeanne Carola Francesconi attributes the creation of sugo alla puttanesca to Ischian painter Eduardo Maria Colucci (1900-1975) who — according to Francesconi — concocted “vermicelli alla puttanesca” as an adaptation of alla marinara or “seaside-style” sauce.

But the definitive albeit anecdotal answer to this conundrum may lie in an article published by Annarita Cuomo in the Ischia daily, Il golfo, in February, 2005: “Il sugo ‘alla puttanesca’ nacque per caso ad Ischia, dall’estro culinario di Sandro Petti,” “Puttanesca sauce was born by accident in Ischia, the child of Sandro Petti’s culinary flair.”

According to Cuomo, sugo alla puttanesca was invented in the 1950s by Ischian jet-setter Sandro Petti, co-owner of Ischia’s famed restaurant and nightspot, the “Rancio Fellone.”* When asked by his friends to cook for them one evening, Petti found his pantry bare. When he told his friends that he had nothing to cook for them, they responded by saying “just make us a ‘puttanata qualsiasi,'” in other words, “just make us whatever crap” you have (see my original post for a definition of the Italian puttanata).

“All I had was four tomatoes, a couple of capers, and some olives,” Petti told Cuomo. “So I used them to make the sauce for the spaghetti.” Petti then decided to include the dish on the menu at the Rancio Fellone but “spaghetti alla puttanata didn’t sound right. So I called it [spaghetti] alla puttanesca.”**

Petti’s anecdote is probably tenable but is by no means exhaustive (from a philological point of view). To make matters worse, Colucci was Petti’s uncle and it’s unclear why Francesconi attributes the dish to the painter. But philology is an inexact science: the origin of sugo alla puttanesca probably lies some where between the isle of Ischia and the Amalfitan coast, where tomatoes, capers, olives, anchovies, and garlic are ingredients of choice. It’s clear that the dish emerged sometime after World War II when tomato-based sauces grew in popularity among the Italian middle class. My philological sensibility leads me to favor the “puttanata/puttanesca” theory over any other and there is no evidence — at least that I can find — that points to prostitution as the origin of the dish.***

There’s one thing we can all agree on: sugo alla puttanesca tastes good.

Brothels were outlawed in Italy in 1958.

When it comes to the origins of many of the classic Italian dishes that we all know and love, it’s nearly impossible to identity the etymon — the origin, the fons origo, the spring from which it sprang. Such is the case with Spaghetti alla Carbonara, for example: to my knowledge, no scholar has been able to trace its history with even the remotest semblance of certainty. In fact, as gastronomic philologists, all we know with certainty is what we don’t know about many of the great recipes of the Italian culinary canon.

Such is the case for Pasta alla Puttanesca: you may remember my post in which I traced all the historical data I could gather on the origins of this dish we all love so much.

The fact of the matter is that we live in a time of intensified awareness of the gastronomy that surrounds us. Not since the Italian Renaissance has Western Civilization devoted so much attention (and scholarship) to the foods that we eat. During the 20th century, when dishes like Carbonara and Puttanesca became so popular, we all lived in a culinary dark ages — when scholarship ignored the workaday aspects of our nutriment. BTW, for the record, neither Artusi (whose cookbook was compiled in 1891) nor Cavalcanti (1837) mention either Puttanesca or Carbonara.

The other day, a reader from Detroit — a Brooklyn native born to a Neapolitan mother, Robert Bilenchi — left the following comment on the post. I love his idea of trying to document the dish’s origins by interviewing folks who were living in Italy in the periods between the two wars and after the second world war. In the truest spirit of philology (the love of words), I asked Robert for some photographs of his mother and permission to post them here with his mother’s observations.

My mother is 93 and is still living. She was born in 1917. She remembers this dish, Spaghetti [alla] Puttanesca as a child and a young adult in Naples Italy. My parents made the dish when I was growing up in New York in the ’50s. So how then does this dish get to be invented in the ’50s? My parents were not well connected enough to have received the recipe from any Italian chef who might have been associated with the alleged inventor. Someone needs to do a survey of older Italians born prior to the ’30s to refute the ’50s story of the invention of Spaghetti [alla] Puttanesca. The Annarita Cuomo story appears to be erroneus. Sandro Petti did not invent the dish and though a study may have found the dishes popularity to have swelled in the ’60s, this does not show it was invented just prior to that time. Let’s do a study while these people are still alive.

Oops I did it again: pizza and Bertani 1988 Amarone!

Above: Charles Scicolone can often be found at La Pizza Fresca in Gramercy (Manhattan), where they allow wine luminaries to bring their own bottles. The list there leans heavily toward modern and the prices are prohibitive. The pizza is good (although not as good as the pizza I recently tasted in San Antonio! I’ll be posting on that shortly so stay tuned).

Franco is going to kill me. I did it again: while Tracie B and I were in Manhattan for the last show in the NN+ tourette a few weeks ago, I paired pizza with an absolutely, undeniably, unquestionably, and egregiously inappropriate wine.

Two inappropriate wines, actually: Bertani 1988 (yes, 88!) Amarone and Cantalupo 1996 Ghemme Collis Breclemae (above).

One of the most important things I learned in college (and one of my favorite mottoes) was “This statement is false.” (It is a classic example of the Russel paradox. The other important thing I learned was that no movie is set in the future: “If the story has been told,” film professor Tinazzi used to say in Padua, “then it has already happened.”)

Above: Charles always orders the Margherita but I am always partial to the Puttanesca there. I never ate anchovies on my pizza until a pizzaiolo wrote the name of my band using anchovies on a pizza many years ago when I was on a summer tour in the Dolomites playing cover tunes (yes, I toured in a cover band in Italy). Evidently, Elvis Presley used to eat salt-cured anchovy fillets to soothe his throat while on tour.

What bearing does the above have on the present post, you ask? In the wake of the brouhaha that followed Dr. V’s post in which he quoted me as saying pizza could not be paired with wine, and my subsequent apologia pasoliniana, I feel compelled to confess that what I did was wrong: one should never pair two such elegant wines with the acidity and saltiness, not to mention the high temperatures, of pizza. At the same time, and here’s where the paradox kicks in, the experience was decadent, sumptuous, utterly delicious, and thoroughly enjoyable.

Charles’s 1996 Ghemme was earthy and had a crazy eucalyptus note, still very powerful and young, an amazing expression of Nebbiolo (and very definitely Piedmontese despite what Henri Vasnier said the other day on Brooklynguy’s blog). I’ve tasted this wine a number of times over the years and it is just beginning to come into its own.

The 1988 Bertani was sublime: a great vintage by one of the appellation’s greatest producers, very traditional in style, powerful and rich, yet already attaining the ineffable lightness that Amarone begins to achieve in its late adolescence.

Were these wines wasted by a paradoxical pairing? In other words, did we ruin the wines by pairing them with foods that detracted from their aromas and flavors? My feeling is that no, we did not: we experienced them in a new and different way than their traditional pairings. After all, the traditional pairing for an Amarone like that is pastissada de caval, horse meat stewed until stringy in red wine. Where would one find a horse to eat in Manhattan?
