The origins of Zibibbo (closer reading part 2)

In response to my post on Sir Robert the other day, both Charles (friend, mentor, venerated palate, and husband to Italian cookery authority Michele Scicolone) and Tracie B (my soon-to-be better and definitely better looking half) asked about the origins of the grape name Zibibbo.

In 1605, Sir Robert writes of white Tuscan grape “Zibibbo,” which is “dried for Lent.” It is highly likely that he is referring to the Tuscan tradition of Vin Santo. One of the unique things about Vin Santo, beyond the winemaker’s intentional oxidation of the wine, is that it often undergoes a second fermentation in the spring when temperatures begin to rise and my hunch is that the reference to Lent has something to do with vinification practices (but that’s another story for another post).

Today, we know Zibibbo as the white Moscato used to make the famed wine of Sicily, Passito di Pantelleria. But in antiquity, the word meant simply “dried grape,” from the Arabic zabib, akin to the Egyptian zibib. As it turns out, it was only recently that the term began to denote specifically the grapes used for the famous wine of Pantelleria. It’s not clear which variety Sir Robert is referring to but he’s clearing referring to a dried grape wine (especially in the light of his reference to Lent).

When I was a grad student, my dissertation adviser used to call me the segugio, the blood hound or sleuth: this morning I did some snooping around and found and translated the following passage by one of Italy’s greatest philologists, Alberto Varvaro, professor at the University of Naples (o what a joy to be reunited, finally, with my library!). I love what professor Varvaro has to say in his conclusion, i.e., that part of the reason why we’ve come to know Moscato d’Alessandria as Zibibbo is because Palermitan shopkeepers adopted the term as a designation of higher quality in order to charge higher prices.* I also love Varvaro’s Sicilian style and humor in describing this linguistic phenomenon — all the while in a highly erudite and scientific context. Varvaro was born in Palermo in 1934 and is one of Italy’s leading experts in dialectology.

    Everyone knows Zibibbo, the excellent white table grape variety, grown for the most part in Pantelleria (hence the name)… Many are quick to say that this has always been its name and that the connection between the name, meaning, and referent-object has ancient and undisputed origins.** But this is not the case: the Arabic zabib, which with all likelihood gave the name to our grape, was a dried grape and was probably the meaning of the term when it began to be used in Sicily (according to [anthropologist] Alberto Cirese, its meaning remained unchanged in outlying areas and as far away as Central Italy). Even if this were not true, there is no disputing the fact that dictionaries in the 1700s and 1800s unhesitatingly define the term zibbibbu as a red grape and therefore, there is no doubt that the word’s meaning has changed only recently. Lastly, it is worth noting that the grape’s history in Pantelleria is proof of this recent change. Apart from its past history, it is useful to consider the present state of things: as if to play a trick on Linnaeus [the father of modern taxonomy] and surely motivated by profit and self-promotion, most of the shopkeepers in Palermo make a clear-cut distinction between zibbibbu and uva: if you use the word uva [i.e., grape] when you ask for zibibbo, the shopkeepers will correct you, perhaps because they suspect you wish to pay less. Thus, we have a case in which the solidarity of the name, meaning, and referent object has been broken in relation to a change in the referent-object as well as in relation to the linguistic articulation of the meaning.

* In Grape Varieties of Italy, Calò, Scienza, and Costacurta list these synonyms for Zibibbo: Zibibbo Bianco, Moscatellone, Moscato di Pantelleria, Salamonica, Salamanna, Seralamanna, Moscato di Alessandria [Muscat d’Alexandrie, Muscat from Alexandria, a reference to its Egyptian origins], Muscat [in French].

** Referent or referent-object is a term used in linguistics to denote “The entity referred to or signified by a word or expression; a thing or person alluded to” (OED). In this case, Varvaro is using a classic triangular model of linguistics, articulating the word itself (the name or signifier), its meaning (the signified), and the actual object to which it refers.

Negro Amaro, false friends, and folkloric etymologies

For the last few days, I’ve been “riding” with Paolo Cantele (center) of the Cantele winery (Apulia) in Austin and Dallas. Every once in a while, the wine trade brings you in contact with folks you genuinely enjoy hanging out with. Beyond his wines (which are fantastic, btw, and very well priced; his family’s Fiano, Rosato, and Salice Salentino are my favorites), we discussed the Israeli-Palestinian conflict, Dario Fo and Pasolini, and he told me the funniest story about meeting Ninetto Davoli in New York in a food shop last week. (Paolo bears a striking resemblance to actors Gary Oldman and Edoardo Ballerini, the latter, a good friend of mine.)

One of the more interesting conversations that came up, was the origin of the grape name Negro Amaro. If you’ve followed my blog, you most likely have seen one of my posts where I marry my interest in philology with my passion for ampelography — the latter meaning, literally, the writing of grapes. (Check out my posts on Aglianico and Valpolicella, where I conjugate my love for philology and toponymy.)

Many believe that the origin of the grape name Negro Amaro derives from its literal meaning in contemporary Italian, black bitter.

While Calò, Scienza, and Costacurta (Vitigni d’Italia or Grape Varieties of Italy, Calderini, Bologna, 2006) concede that the origin of the name is unknown, they point the dialectal binomial niuru maru “due to the black coloring of the berries and its rich tannins which impart a bitter flavor to the wine or perhaps nero-mavro which could back [the theory that its name derives from] the black character of its skin” (p. 590).

Partisans of the nero-mavro camp believe that the name comes the Latin niger (black) and Greek mavros (black). The idea would be that the grape was named in Latin and Greek because of confluence of Greek and Roman culture in Salento (at the very tip of the heel of the Italian boot, at the top of the Mediterranean basin).

It’s important to note that mavros meant Moor in ancient Greek and that it denoted an inhabitant of North Africa and/or his language. As in other romance languages, moro in Italian ultimately came to denote the color black (probably by the 16th century, when many modern forms of grape names took shape in Italian).

But Paolo introduced a theory that I’d never heard before: that the binomial niger mavros could be due to the fact that Salento was a cross roads between the Byzantine (Greek-speaking) and Western (Latinate-speaking) empires.

The names of many grapes are early forms of wine marketing. For example, Primitivo (which was not cultivated until the modern era in Italy) is so-named because it is early-ripening (primitivus means simply early and was used to denote “first-fruits” in Latin). It’s likely that it was given that name by someone who wanted to encourage its use (i.e., this is a good grape because it ripens early, and hence, you will be able to harvest early avoiding potential bad weather during the later months of fall).

I don’t believe we’ve solved the conundrum of Negro Amaro’s etymon but I do think that its origins could lie in the fact that in antiquity it was cultivated in a place where Greek was the koiné or common language, adopted by all for expediency sake.

I have always thought that black bitter was what we call in linguistics a “false friend,” i.e., a reading based superficially on the immediately apparent meaning of word (for example, magazzino does not mean magazine in Italian in the sense of publication or weekly; it denotes a warehouse or store of military provisions). Why would anyone call a grape bitter? Historically, names were given to grapes for pneumonic or commercial value and not to encourage people not to grow them or consume them. My philological sensibility tells me that black bitter is a folkloric etymology and that the dialectal phrase noted by Calò et alia probably comes from a superficial reading of the grape name.

Either way, I’m happy to have found in Paolo a true friend and interlocutor.

A propos good friends, Paolo and I have a good friend in common, Filena Ruppi, who produces a fantastic Aglianico del Vulture together with her husband Donato d’Angelo (for whom the winery is named). I caught up with Filena at Vinitaly, where she posed for my camera with her husband and an image of Mt. Vulture in the backdrop. Their Valle del Noce is one of my favorite expressions of Aglianico.

Labor amoris and a dedication

The first exam I took at the University of Padua in 1988 was History of the Italian Language, with Professor Gianfranco Folena (1920-1992), one of the great linguists and philologists of the twentieth century. (The exam was on Parini’s Il giorno and 18th-century Italian neologisms.) He was the first to encourage me to continue my studies in philology and he wrote me the reference letter that ultimately won me my fellowship and teaching position in the graduate studies program at the Department of Italian, U.C.L.A.

Professor Folena was a delightful, gentle, and generous man, he loved to laugh, and he loved to remember how he sold turpentine for a living when he returned to civilian life from the concentration camp where he had been imprisoned (as a political undesirable) during the war.

I could never aspire to the greatness Professor Folena achieved while on this earth (nor have I suffered the way that he and his generation did). But I do think of him often and how his turpentine is my wine. I am so very fortunate to make a living doing something that I enjoy, a career that brings me into contact with interesting people and takes me to interesting places.

I hawk wine for a living because translating and writing a blog doesn’t pay the bills. But I have never abandoned my labor of love and I am very proud to share the news that my translation of Professor Gian Piero Brunetta’s The History of Italian Cinema has been published by Princeton University Press. Professor Brunetta still teaches at the University of Padua (where I also studied Italian cinema) and we both remembered Professor Folena fondly in our email correspondence on queries I had for him regarding the translation. The book arrived yesterday in the mail and is my third hard-cover university press translation.
