Italy meal 1: Trattoria il Pozzo, Sant’Angelo in Colle (Montalcino)

Just like people, restaurants have “good days” and “bad days.” The night we went to Trattoria il Pozzo in Sant’Angelo in Colle (Montalcino), it was one of those off-the-charts good days (and not every meal we had in Italy was worth writing home about, believe me). I’ve been going there since 1989 when I first began to “frequent” Montalcino (the fons origo of my passion for Italian wine). Paola (in the kitchen) and Franca (front of the house) Binarelli have owned and run Trattoria il Pozzo since 2001 and honestly, the food there has never been better. It was just one of those magical culinary nights, when everything came together just perfectly. I’ll let Tracie P’s superb photos do the talking…

Need I say more? To look at the meat you’d think it was over cooked. But the secret is that the beast is slaughtered young. Older than a calf but still relatively young and so the meat has a pink rather than blood-red color.

Fried artichokes. Franca told me that Italian celebrity chef Gianfranco Vissani once complained that they had served these with lemon wedges. So no more lemon wedges!

The 2004 Brunello di Montalcino by the dearly departed Gianni Brunelli, one of the great Tuscan restaurateurs of our lifetime. Beautiful acidity, gorgeous fruit, and man, the combination of the red fruit flavors of the wine and its acidity against the fat and flesh of the steak was better than… well, actually, it wasn’t better than… it was our honeymoon after all! ;-)

Tracie B and I were both concerned when, the other day, we read that the 2004 Brunello di Montalcino by Il Poggione had been eliminated from the top-ten wines in The New York Times recent blind tasting panel of 04 Brunello.

Blind tasting can be such a tricky business and in many ways, it removes wine from the terrestrial context in which we consume it (and the way it was intended to be consumed). In blind tasting, our experience becomes metaphysical, in other words, beyond the physical inasmuch as it treats wine as an abstraction. The intention is noble: blind tasting is intended to remove as many “extraneous” variables as possible and force the taster(s) to evaluate the wine purely on its sensorial attributes as an empirical expression of its intrinsic value. But wine, by its very (human) nature, cannot be reduced to pure science.

Even Eric, whose palate I admire greatly, was surprised that Il Poggione didn’t make the top-ten cut. “Some very well-known brunellos,” he wrote, “missed the cut in our blind tasting, including one of my perennial favorites, Il Poggione… A cautionary note about blind tastings: they are snapshots of a wine at a particular moment. I would never say no to a bottle of Il Poggione, even if I did reject it here.”

Never ones to say no to a bottle of Il Poggione, Tracie B and I went to Trio in Austin last night and asked our friend sommelier Mark Sayre to open a bottle of the 2004. Above and beyond our friendship, I turn to Mark when I want the proverbial “second opinion” (and his wine program offers the ideal setting for tasting fine wine in Austin).

Tracie B, Mark, and I all agreed that the wine is going through a very tannic moment in its evolution. We opened the bottle, decanted it immediately, and then tasted it immediately. Then, we put it aside and let it aerate for about 45 minutes.

At first sip, the wine was overwhelmed by its tannin, but when we returned to it, it had begun to open up beautifully, showing that magical balance of tannin, fruit, and acidity that makes Montalcino (in my view) one of the greatest appellations in the world.

Not everyone made great wine in 2004. As much as the Tuscan wine industry would like us to believe that 2004 was a 5-star vintage, it simply was not: summer heat spikes plagued growers whose vineyards lie at lower elevations.

But, as father-and-son winemaking team Fabrizio and Alessandro Bindocci will tell you, Il Poggione’s vineyards lie at some of the highest elevations in the entire appellation, reaching 400 meters a.s.l. and thus keeping summer temperatures cooler during warm summer months.

I don’t think 2004 will be remembered as a great vintage in Montalcino but I do think a handful of producers made superb wines and Il Poggione was one of them. The wine has many, many years ahead of it in the bottle and will only get better with age. It’s a young buck right now and just needs some patience and aeration to temper the power of its youth.

The je-ne-sais-quoi moment came when Mark insisted that we pair the fried pork belly with the wine: the classic plum notes of the wine and its tannin attained an ethereal nobility when blended with gelatinous fat and caramelized flavors of the dish.

What happened with the bottle that Eric and the panel tasted in New York? We’ll never know: on any given Sunday, even in a laboratory environment, a bottle of wine can be affected by innumerable variables (including how it was handled by the many actors who “touch” it before it reaches the end user).

Our evaluation? In the words of Tracie B, “Mikey likes it!”

Mad World 2000 Brunello

It’s been a mad, mad week already, between travel, wedding planning, business meetings with a California client, and catching up with old friends.

Last night, to celebrate Jaynes Gastropub family-member Nicholas George’s successful level 2 sommelier certification exam, Jayne and Jon treated the extended-family crew assembled at the bar to a bottle of 2000 Brunello di Montalcino by one of my favorite (and one of Tom Hyland’s favorite) producers, Il Poggione. 2000 was such a warm vintage in Tuscany (and throughout Italy) and many of the wines have that stewed tomato thing going on. But not this bottling: it was powerfully tannic and it rocked with bright acidity and plum and cherry fruit. I’m sure that winemakers Fabrizio and his son Alessandro Bindocci would tell me that their higher elevation in Sant’Angelo in Colle and their 40-plus-year-old vines allowed them to make great wine in a not-so classic vintage.

Earlier in the day, I took time out to catch up with my good friend Mike Andrews and to visit his studio in Glendale. He loves to tease me that I was voted “most likely to have a successful career in music” by our high school graduating class: since launching his career as a film composer in 1999, Mike has scored countless hit movies. Mike let me take the above photo of the piano he used on his 2003 British number-one-Christmas-hit single version of Tears for Fears’s “Mad World.” He swore me to secrecy: I cannot reveal the technique he used to achieve the instrument’s unique sound on the recording (and had to photograph it obliquely). But it was a thrill to feel its aura, as Walter Benjamin might have said.

On Friday night, Tracie B’s birthday celebration weekend began with a glass of 1987 López de Heredia Tondonia — one of the best wines I’ve tasted in a long while. Our good friend Mark Sayre at Trio at the Four Seasons always has something crazy and stinky for us to drink when we hang out at Austin’s best-kept-secret happy hour (half-priced wines by the glass, happy hour snacks menu, and free valet parking).

I’ve become somewhat obsessed with chef Todd Duplechan’s fried pork belly. He makes a confit of pork belly and then fries it: when he serves it, the fat in the middle is warm and gelatinous and the outside is crispy and savory. You know the story I always tell about the Rabbi and the ham sandwich he “can live without”? Well, I can’t live without Todd’s fried pork belly. He garnishes with a relish made from seasonal vegetables, in this case pickled watermelon radish and okra.

Later that evening, we met up with some friends at the High Ball (no website but does have a Facebook fan page), Austin’s newest (and only) bowling alley cum Karaoke bar cum mixology and designer beer menu. Tracie B had the “Heirloom”: roseberry fizz, citrus infused vodka, elderflower, rosemary, muddled blackberries. The High Ball hasn’t even had its official, hard opening and it is already packed nightly, Austin’s newest hipster hangout and a lot of fun with its art deco, Bettie Page ambiance and clientele.

Thanks to everyone for coming out to my Italian wine seminars at the Austin Wine Merchant. Last night was Tuscany (that’s our new friend Mary Gordon, front row center). Highlights were 2006 Chianti Classico by Fèlsina (such a great value), 2001 Brunello di Montalcino by Il Poggione (this vintage is just getting better and better, always a fav), 2004 Vino Nobile di Montepulciano by Villa Sant’Anna (old-school Vino Nobile that I thoroughly dig), and 2005 Tignanello (not exactly my speed but always a go-to trophy wine). Coincidentally, Laura Rangoni posted an interview with the “father of Tignanello” Renzo Cotarella on her blog yesterday. “Barrique is like a mini-skirt,” he told her, “not every woman can wear one.” I couldn’t have said it better myself!

Vin Santo: an overlooked “orange” wine? (and a more likely explanation of its name)

Scanning my Google Reader feed this morning, I came across these posts by my friend Ale in Sant’Angelo in Colle. He and his father grow Sangiovese and make Brunello di Montalcino for one of the oldest — and one of my favorite — producers in the appellation, Il Poggione.

Reading his descriptions of harvesting and drying grapes for the production of Vin Santo, it occurred to me that Vin Santo is an “orange” wine. There is no canonical definition of “orange wine,” even though a new “orange wine” movement has clearly emerged among European winemakers, mainstream wine writers, fringe wine bloggers (like me), enthusiasts, and lovers. Vin Santo is generally not made using skin contact during fermentation (one of the fundamental techniques employed in the production of orange wine). But there is no denying that Vin Santo is orange in color.

The rich orange color of Vin Santo is created by the drying of the grapes and by intentional oxidation of the wine.

The earliest documented printed reference to Vin Santo is found in Giovanni Cosimo Villifranchi’s Oenologia Toscana (1773). In 1605, Sir Robert Dallington mentions a wine called Zibibbo, which was “dried for Lent” and could possibly be a reference to Vin Santo (see his entire description of grape growing and winemaking in Tuscany here).

Many claim that the name Vin Santo (literally, “holy wine”) was coined in the 15th century when Greek humanist Basilios Bessarion tasted the wine and compared it to the wines of Xantos (see also this entry on Bessarion in the New Advent Catholic Encyclopedia). Supporters of the theory maintain that he liked it so much, he exclaimed “Xantos!” and those present understood him to say “Santo!” But I doubt this is the case.

I’ve heard some say that the name is inspired by the fact that Vin Santo can go through a second fermentation in the spring when temperatures rise in the vinsantaia. Like Christ, the wine “rises again.” I doubt this is the case but Dallington’s reference to Lent leads me to believe that dried grape wines were associated directly or indirectly with Easter in his time.

In 1773, Villifranchi writes: “The name that is given by us today to this ‘Vino di Santo’ is believed by some to be owed to Ancoret saints* and the Monks of Soria [Spain] who originally made wine in this manner.” He adds that “others believe that this name derives from the fact that the grapes are typically pressed during the period of the Christmas holidays.”

Whether you call Vin Santo an orange wine or not, it would seem to pass muster with the natural wine dogmatists. Using a “mother” yeast to start fermentation is a sine qua non of Vin Santo production: after pressing, sediment is scraped from a cask from a previous vintage and then added to the newly pressed juice to initiate fermentation. That’s how they’ve been making Vin Santo for centuries (or at least since Villifranchi first described methods of vinification employed in his day).

The only difference is that in Italy, they don’t call it “natural wine.” They just call it wine.

Fiorano 94 Malvasia and Il Postino

The story has been told many times but was first recounted famously in English by Eric: somewhere in the 1960s and 70s, the eccentric Italian noble, Alberico Boncompagni Ludovisi, prince of Venosa, developed what are still undeciphered methods of vinification and aging that allowed him to create unique, powerful, nuanced long-lived expressions of Malvasia di Candia, Sémillon, and Sauvignon Blanc. The secret at the Fiorano estate (located in the region of Latium, just north of Rome)? Mold… mold on the covering the aging casks, mold covering the bottles aging in the cellar.

I’ve had the great fortune to taste the wines many times. The first occasion was when they arrived in the U.S. in 2005. They had been rebottled and relabeled expressly for sale in the U.S. market and they commanded and continue to command a price that reaches beyond my means. But, man, they were good and they still are.

Yesterday, my friend Susana Partida, owner of Salute Wine, who brokers the wines in Texas, generously brought a bottle of the 94 Malvasia to lunch in Dallas (she and I became friends because her sister Felice cuts my hair at the James Allan Salon in Austin!).

Adelmo is originally from San Vincenzo in Maremma (along the Tuscan coast) and he grew up in Florence. It’s always great to taste with him and glean wine knowledge from his many years in the business. He sent over some pâté and crostini after he tasted the Fiorano with us — his recommended pairing.

Would the prince have called these natural wines? Probably not. But are they? I believe they most certainly are. When you drink these extraordinary (and extravagant) wine, you taste the hand of an Italian aristocrat who recognized the nobility of the grape and the place, who got out of Nature’s way and let her do her work.

This was a wine, as Tracie B put it last night over our dinner of quesadillas, that “speaks of a place, of tradition. It’s real and it’s a product of its environment and of the culture, not of technology and manipulation.”

Susana generously sent me home with a half a bottle (we each had a glass with our lunch) and Tracie B and I lingered over the wine through dinner and a movie: Il postino, also from the 1994 vintage. In my more militantly Marxist university days, I might have dismissed this poignant romance as cloyingly engagé. But now that I’m a “Brunello socialist,” I can openly say that I found the movie irresistibly charming and ingenuously touching. Maybe it was because I remembered what Brunetta said about Troisi’s performance, in his History of Italian Cinema (translated by yours truly). Troisi, he wrote, gave “the world his career’s most heartbreaking hymn to life and love.” Maybe it’s because Tracie B’s generosity of heart and her wonderful spirit are rubbing off on me… The answer probably lies somewhere between a glass of 94 Malvasia and a kiss…

Mazel tov, Ale! His Wine Advocate scores and reviews are in and Il Poggione’s current releases are enjoying high marks from Antonio Galloni. Any one who reads Do Bianchi knows how much I love Il Poggione’s traditional-style Brunello and it’s great to see the winery get the recognition it deserves. These reviews and notes are testament to Antonio’s love of terroir-driven Italian wine. Chapeau bas, Antonio. I’ve been a fan since the days of your Piedmont Report and I love what you’ve done with the Italian notes at WA.

Tracie B and I spent our first weekend back in La Jolla since I moved to Austin. The number-one-hit-song highlight was nephew Oscar’s first birthday party. The Riles-Parzen family gathered together in March, 2008, not long after he came into this world, for an “Oscar Party.” That’s brother Micah (Oscar’s dad), me, and the birthday boy (chewing on my lens cap!).

The night we got in, we were 8 for dinner at Jaynes (where else?). The food was great and we drank a fantastic 1997 Felsina Chianti Classico riserva (on the list at a great price) with our main courses and 1985 Brunello di Montalcino by Il Poggione courtesy of Benoit at the end of the fête.

The 97 Felsina showed an irresistible goudron note and its fruit and acidity were great with the seared ahi tuna. Nearly a quarter century in age, the 85 Poggione was bold, beautiful, and proud — with vibrant acidity and gorgeous fruit. I’ve tasted this wine a number of times over the last five years and it has never disappointed.

Saturday afternoon found us shopping with Judy at the Asian market in Kearny Mesa, 99 Ranch Market. On her shopping list: rice noodles, preserved mandarin oranges, persimmons.

Hot and sour wonton soup for lunch at Spicy City (4690 Convoy St Ste 107, between Engineer Rd & Opportunity Rd, San Diego, CA 92111, 858-278-1818). Also in Kearny Mesa. So good… I LOVE that place. (I used to get my pre-sbarbato highlights done at the Korean salon in the same shopping mall.)

On Saturday night, Tracie B and I were geeked for sushi with Judy at Zenbu but we wanted to check out the “hot rock,” too. Our waiter told us it was the “biggest rock” she had ever seen. (Thinly sliced beef is cooked on the scalding hot rock.)

I had no idea that my highschool buddy Matt Rimel, who owns Zenbu together with his lovely wife Jacky, was such a fan of Texas. He got this belt buckle there. A professional hunter, he travels to my new home state five times a year for bow hunting, he told me. He invited me to go boar hunting with him this year… I am SO there. Alfonso, you game?

Saturday night ended with a bottle of 2006 Lunar (whole-bunch-fermented Ribolla) by Movia at Jaynes. Benoit and I decided to decant it. I’ll do a post later this week on Lunar and the story behind it. Aleš Kristančič explained to me how he makes it when my band Nous Non Plus played at his winery in April 08. It’s incredible…

The rentacar screwed up and gave us a Mustang instead of the Pinto I had reserved. Me in a muscle car? Why not???!!! When we rolled up to the Jaynes Gastropub, martial arts instructor and bouncer at Air Conditioned next door, Alex, told me, there’s a tough guy underneath my nice-guy skin. He asked me rhetorically: “How else would you have survived so long?” Right on, brother, right on. I’m so glad I made it!

Reports of August 15 hail in Montalcino confirmed

At least one grower has confirmed reports of an August 15 hail storm in Montalcino. I’m sad to report that the 2008 harvest was damaged (up to 35%, according to the post) but I am glad to see that someone in Montalcino is bringing much-needed transparency to the appellation. Franco was the first to post about the storm, which occurred last Friday, and until now, no one had stepped forward to confirm or deny the report.

TTB guidelines for Brunello importers

This morning, my friend, top Italian wine blogger Alfonso Cevola (On the Wine Trail in Italy) sent me a link to the Alcohol Tobacco Tax and Trade bureau’s new guidelines for Brunello importers. According to the circular, importers must now submit a statement from the Italian government “attesting” that the wine meets Italian appellation regulations. It’s not clear how U.S. importers will obtain required documentation for Brunello coming in after June 23 (that’s Monday!).

Italy Days 5 and 6: South Tyrol

Above: no, those ain’t no matzoh balls… they’re canderli at Santlhof, a rustic tavern that shot immediately to the top of my all-time great restaurant experiences. Canederli or knödel are speck-filled bread dumplings served in broth, a classic South Tyrolean first course.

On Saturday April 5, five days in to my trip, I spent the morning and better part of the afternoon tasting at Vinitaly. The highlight that day was Il Poggione, a traditional-style producer of Brunello, who has emerged unscathed by the recent Brunello controversy. One of the most fascinating insights that winemaker Fabrizio Bindocci shared with me was his belief that mandatory dry farming is one of the appellation’s biggest problems. “If producers in the lower-lying [and consequently warmer] areas of the appellation were allowed to irrigate in 2003,” said Fabrizio, “they wouldn’t have had as many problems dealing with warm temperatures in summer.” If used judiciously, he explained, “irrigation could be a positive change for Brunello.” He also noted that many growers have vines that “are too young” and as a result, the roots can’t find the water table when the weather is excessively warm. While many have proposed that Brunello producers be allowed to use grape varieties other than Sangiovese (a change vehemently opposed by Fabrizio), irrigation, he said, could help to resolve some of the appellation’s current problems.

It’s spicier than its cousins in San Daniele in Friuli and Parma in Emilia and it pairs beautifully with the fresh white wines they make up there. I had been invited to an industry party to be held Sunday night at the Hofstätter winery in Tramin (Termeno, in Italian). Late Saturday afternoon, I headed out of Verona toward the alps and checked into a hotel that I highly recommend — a little 3-star called Tirolerhof, where the rooms were beautiful, clean, and reasonably priced, and the Teutonic breakfast spread was worthy of a 5-star hotel in Vienna (the hotel also has a covered, heated pool).

After a simple dinner and a much needed restful night, I awoke to a panorama “alive with the sound of music”: the stunning beauty of South Tyrol — a verdant, vine-covered Alpine valley — sings a soothing melody, a balm that helped to allay the humdrum din of Verona and the wine fair still ringing in my head.

On the recommendation of winemaker Martin Hofstätter, I headed to the nearby Santlhof, a rustic tavern and favorite Sunday biker stop where I enjoyed a leisurely, delicious, four-hour Sunday lunch, complete with wines that simpatico owner Georg Mayr grows and vinifies on his estate (which dates back to the 16th century). His white — a blend of Chardonnay, Kerner, and Traminer — was killer, totally natural in style, fresh and clean. I could definitely get used to the sound of this music.
